Boondhi Ladoo / Laddu

In our family , diwali sweets will be laddu  and mysorepak. Our grandmom usually make mysorepak  with fresh homemade ghee. Nowadays we are missing those sweets as we can’t get those sweets. We are making these sweets with store bought ghee , those taste is not similar to our grandmom’s sweets.

Makes – 100 Ladoo
Requirements :
Besan flour – 1 kg
Cooking soda – ¼ tsp
Water – 3 cup
Yellow  Food color  ( optional )
Oil for frying
 Sugar syrup :
Sugar – 2 kg
Water – 2 ½ cup
Cardamom powder – 1 tbs
Rose water – 5 drops
Cashew – 20
Raisins – 30
Cloves – 20
Camphor –  a pinch
Jathikkai / Nutmeg - 1 small
Ghee – 1 tsp
Method :
Besan flour can be storebought or homemade.
My mom usually makes with Homemade Gram flour . She says it tastes better than store bought  besan flour.
My mom usually wash the split channa dhal ( kadalaparuppu ) , let it dry and grind in flour mill.
This flour is used to make ladoo and mysorepak in our home.

Mix the besan flour , cooking soda and water to a smooth batter of dosa batter consistency.
Heat oil in a kadai. Place the large ladle with pours and pour about 3 – 4 laddle full of batter .

Small boondhis will fall into hot oil.

Fry well and take out.

Make boondhis of all the batter.
In the mean time , mix the sugar and water and bring to boil.
Melt the ghee and fry cashew and raisins.
In the same ghee fry the nutmeg and cloves , crush into powder.
When the sugar syrup reaches one string consistency , take off from flame.
Add  the cashew , raisins , powdered nutmeg and cloves. Add in the camphor and mix well.
Reheat the sugar syrup and add the fried boondhis to the syrup.

Mix well and let it cool down a little.
Make into small balls of desired size and roll over the sugar crystals.

Boondhi ladoos are ready to serve.
