Grape popsicle / Grape Ice Pops / Thratchai kuchi Ice


 

   Grape is a common fruit available around the world. Popsicles are known in Tamil Nadu as Kuchi Ice. They are many flavours of Kuchi Ice. When summer begins say by March itself small vendors in bicycle with a wooden box filled with ice blocks with the different flavoured popsicles will blow horn in the streets. We kids will be eagerly waiting to get our favourite Popsicle.





Requirements :
Black grapes – ¼ kg
Sugar / honey  – 2 tbs ( optional )
Salt a pinch ( To enhance sweetness )


Method :
Wash the grapes and pat dry .
Grind the grapes   and strain the juice.
Mix in the sugar / honey to the juice.
Pour the juice into popsicle mould.
I used small plastic cups as I don’t have  popsicle mould . you can use paper cups.
Cover with aluminum foil and insert the popsicle stick.
Keep in the refrigerator at the freezer compartment for 6 – 7 hours or overnight.
Take out before serving. Unmould by showing the outside of the cups in running water.
 For me three small popsicles were made with the above quantity.




Grape popsicles are ready to serve.
Chef’s suggestion :
 Adding a pinch of salt to sweet dishes  enhance the sweetness.

 To this popsicle quarter teaspoon of chat masala can be added to make – masala popsicle.

Flower Bread with Spicy Onion Filing #BreadBakers

  For this May 2017 Bread Bakers the theme choosen by Julie Menghini of Hostess at Heart was April Showers bring May Flowers and Mother’s Day. Bake any bread that reminds you of flowers or Mother’s Day.
    I want to make a stuffed flower bread  , so as usual savoury stuffing . Instead of my favourite potato stuffing , I went for this simple onion masala.





Requirements :
Whole Wheat Flour – 3 Cup
Active Dry Yeast – 2 tbs
Salt – 1 tsp
Sugar – 2 tbs
Lukewarm water – 1 ½ cup
Butter – 1 tbs
For Onion Filling :
Onion – 2
Oil – 1 tbs
Ginger garlic paste – ½ tsp
Chilli powder – ½ tsp
Garam Masala – ¼ tsp
Salt – 1 tsp

Method:
In a bowl mix the flour , yeast , salt and sugar together.

Add in the lukewarm water and mix well.
Knead well for about 10 minutes till the dough becomes soft.
Add in the butter and knead again for 10 minutes.
Cover the dough and let it double for two hour.

Onion Filling :

Peel and chop the onion.
Heat oil in a pan , add the chopped onion and ginger garlic paste. Saute  till the onion becomes translucent.
Add in the chilli powder , garam masala and salt.
Stir for five minutes and take off flame.

Making of Flower Bread :

Divide the dough into four equal parts.
Roll each part of dough into round disc.
Place a rolled round disc , spread melted butter and a spoonful of the filling.
Place second rolled disc on top and repeat the same as above .
Followed by the third rolled disc and filling and on top place the fourth rolled disc.

Place an inverted glass on the center of this arrangement.
With a knife , cut the circle into four followed by eight and sixteen.
Take a part and twist gently, Repeat this on all parts.

Apply melted butter on top and sprinkle sesame seeds in the center.
Bake the bread in a preheated oven @ 200*C for 30 minutes.
Let it cool in the rack and serve.
Flower bread is ready to serve.

    Watermelon Salad with Lemon dressing



     Watermelon with its bright pink colour flesh will be seen around summer in India. As the fruit has high water content and is a thirst quencher in the hot temperature.

     It is also said that taking watermelon reduces high blood pressure. For this month's Sshhhh secretly cooking challenge , I was paired with Veena Krishnakumar.The ingredients which veena krishnakumar gave were watermelon and Mint.





    Requirements :
     1 bowl of scooped Watermelon
     Quarter cup of Pomegranate
    1 large onion
    Mint sprig
    For Dressing
    1 lemon
    1 tbs Sesame oil
    ½ tsp Pepper powder
    Salt to taste
    ½ tsp chopped mint leaves


    Method :
    Chop half onion finely and remaining into slices.
    Squeeze juice out of Lemon.
    In a bowl , add the watermelon balls , pomegranate and chopped onion , toss well.
    In the serving bowl , arrange the sliced onion around the edges. Place the mixed sald in the center .
    Chill in the refrigerator till serving.
    In a shaker bottle add the lemon juice , salt , pepper powder , sesame oil , Chopped Mint leaves and shake well.
    Pour the salad dressing just before serving.
    Place the mint sprig on top and serve.

    Watermelon salad with Lemon dressing is ready to serve.
