Bolani – Afghan potato stuffed bread





Bread made with potato stuffing , this bread can be have without any sidedish. It is a vegan flatbread from Afghanistan baked or fried  with vegetable filling. It has a thin crust and filled with a variety of ingredients such as potatoes , spinach , lentils , pumpkins or leeks.
    It is served as an appetizer or main dish.I didn’t fry , I cooked in griddle with oil.




Requirements :

For dough :
All purpose flour – 3 cup
Salt  to taste
Water  - 2.5 cup
Instant dry Yeast – 1 tbs ( If baking )

For stuffing :
Onion – 1
Potato – 5 -6
Tomato – 2
Chopped  green chili – 3- 4nos
Spinach chopped – ½ cup
Coriander leaves chopped – 1 cup
Spring onion chopped  – ½ cup
Chopped garlic – 1 tbs
Oil – 1 tbsp
Salt to taste

For cooking :
Oil as needed

Method :

Making of Dough  :

Use warm water to make dough if using yeast.
In a bowl add the flour , salt and water mix well and knead into a soft smooth dough.

Let the dough rest for 15 minutes.

Making of stuffing :
In a pan , heat oil and add onion , sauté till transparent.
Add garlic and green chilli , sauté well.
Add the chopped tomato and sauté till mushy.
Add in chopped spinach and cook them till the water evaporates.
Take off from flame and mix with mashed potato.
Add in coriander leaves , spring onion and salt to taste , mix well.

Making of Bolani :
Take the dough and shape into equal balls.
Flatten each dough ball with the rolling pin into chappati.
Place the filling on one half of the chappati and close with other.
Heat a griddle and  drizzle oil.
Cook  the bolani on both sides with  medium flame.


Bolani is ready to serve.
