Sprouts Fried Rice



  Sprouts  are said to be rich in vitamins , minerals , amino acids , protein and phyto chemicals. Sprouts can be taken as raw or cooked.
  All the pulses and grains can be sprouted.
 In this rice preparation , I included fenugreek leaves to get nice aroma to the rice. This rice was very tasty as well as healthy.
 Making of sprout :
   soak the moong bean overnight and drain the water in the morning and refrigerate for two days - sprouting of moong.
 Requirements :
Cooked rice – 2 cup
Moong sprouts / Green gram sprouts – ½ cup
Onion – 1
Tomato – 2
Green chilly – 2
Garam masala – 1 tsp
Ginger – 4 cloves
Ginger – 1’’ piece
Oil – 1 tsp
Fresh Fenugreek leaves ( chopped ) – 2 tbs
Cumin – ¼ tsp
Coriander leaves
Salt to taste



Method :
Chop the onion , ginger , garlic and tomato finely.
Slit the green chillies.
Heat oil in a kadai , add the cumin and wait till it splutters.
Add the chopped onion and sauté till it becomes translucent.
Add the chopped ginger and garlic , sauté till raw smell leaves.
Add the chopped fenugreek leaves and sauté for two minutes.
Now , add the slit chillies and chopped tomatoes.
Cook for few minutes till the tomatoes are fully mashed.
Add the garam masala and salt , stir well.
Add the moong sprout and sauté for two minutes.
Add the cooked rice and toss gently.
Cook under low flame for five minutes.





Remove from flame and garnish with coriander leaves and serve.
Serve with any raita.
