Ridge gourd rice / peergangai sadham



 Ridge gourd is one of vegetable with lot of water content. It is good for our health. If we make curry always , it will be boredom. So I thought to try a rice with this wonderful veggie. My family members liked its taste.
Requirements :
 Cooked rice – 2 cup
Chopped ridge gourd – ½ cup
Onion – 1
Tomato -1
Oil -1 tbs
Mustard seeds - ½  tsp
Curry leaves
Roasted groundnuts – 2 tbs
To grind :
Garlic – 4 cloves
Ginger – 2 tsp
Cinnamon – 1
Cloves – 1
Dry chilly -5
Coconut – 2tbs

Method :
Heat oil in a kadai , roast the to grind ingredients and grind into fine paste with little water.
Heat oil , add mustard seeds when it splutters add onion , curry leaves , roasted ground nuts and sauté well.
Add tomato and sauté well.
Add chopped ridge gourd and sauté well.
Add grounded masala and little water. Allow to cook for five minutes.
Add rice and required salt.
Mix well and sauté for five minutes.
Serve with raita.
